  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, chopped
  • 500g chicken breast fillets, cut into chunks
  • 1 heaped teaspoon chilli powder
  • 1/2 tablespoon ground cumin
  • salt and pepper to taste
  • 1 green pepper, roughly chopped
  • 1 yellow pepper, roughly chopped
  • 1 medium red chilli, diced
  • 500g passata
  • 250ml chicken stock
  • 1 (400g) tin kidney beans, drained

  1. Fry onions and garlic in the olive oil over medium heat until soft. Add chicken and lightly brown on all sides.
  2. Then add chilli powder, cumin and salt and pepper to taste, and stir on medium heat for 2 minutes. Add chopped peppers and chilli and continue to cook on medium heat for 2 minutes.
  3. Add passata and chicken stock, stir well and turn to a low heat and simmer, stirring occasionally for 55 minutes. Add kidney beans, stir and simmer for a further 20 minutes.

  • 4 tbsp vegetable oil
  • 8–10 whole bird’s-eye chillies
  • 2 tbsp finely grated fresh root ginger
  • 2 garlic cloves, finely chopped
  • 2 onions, finely chopped
  • 8 chicken thighs, boneless and skin removed, cut into chunks
  • 2–3 tbsp dark soy sauce
  • 2–3 tbsp white vinegar
  • pinch salt
  • 1 spring onion, finely sliced, to garnish
  • freshly steamed rice, to serve

Heat the oil in a large frying pan or wok over a medium heat. Add the chillies, cover and cook for 3–4 minutes, or until blackened. Stir in the ginger, garlic and onions and cook uncovered for 10 minutes, or until softened, being careful not to burn the garlic.

Add the chicken and cook for 8–10 minutes, or until just cooked through. Stir in the soy sauce, vinegar and a pinch of salt, if needed, and simmer for 1 minute.

Place the chicken on a serving platter, sprinkle over the spring onions and serve alongside freshly-steamed rice.

Chicken in Salt & Chilli

Chicken in Salt and Chilli has become increasingly popular in Chinese takeaways and restaurants across Scotland over the last decade and for good reason. Hellooo, how are you? Yep, its been almost a month since we met. First things first… we went to India for a small holiday. However, this gap between us wasn't planned. I was hoping to catch up with you in between, but it didn't work out. Anyways, now I'm back in Bahrain & the first thing I wanted to do was to just pop in here & say a quick hi to you. I'm sure you are in a joyous mood with all the festive celebrations. We also had a gala time back home, though it was a very hectic trip. I wanted to collect some recipes for you as well, but all I did was eat, eat & eat more! Haa… how I like it when somebody else has to bother about all the cooking nuances & my role is to just relish those wonderful dishes. Just thinking about it now, makes me hungry & miss all those home-cooked food :(

Ok, now let me ask you something…. Was chilli chicken the first thing that you used to order in a restaurant during your school/college days? During my school years, fried rice & chilli chicken was the most happening couple. So whenever we dined out, it used to be the standard menu. I remember my brother even getting angry at us, me & my cousin sisters, for ordering the same thing again & again, instead of trying out something new. Fast forward to present, my preferences have changed, but I still miss those deep dark red coloured chilli chicken that I used to have from Kerala hotels.

Btw, I've noticed something, most of the newly married girls, at least the ones I know, learn to cook fried rice & chilli chicken even before learning how to cook the basic everyday stuff. I was also included in that category ) Were you also like that or are you planning to be like that? I've tried different versions of chilli chicken, but I wasn't completely happy with any particular recipe. I always compared it to the taste of chilli chicken during my childhood days & I felt something was missing. Finally I got this recipe from one of Jose's aunt. Its not exactly like what I used to have, but we both liked it very much.I think the ground green chilli gives a distinct flavour to this dish. So for the time being, I'm ending my search for chilli chicken recipe here.

The flavor is truly magical, and this Indo Chinese chicken just melts in your mouth!

What to Add Alongside

I said this chicken recipe was to simple to make, and I meant it. You&rsquore going to do some chopping (if you want to add the veggies, which I highly recommend.

You can really add any veggies you like. Just make sure not to overcook them part of what I love about this chicken dish is when the veggies are cooked but just a little crisp.

This chilli chicken dish pairs well Jasmine rice and you can also make brown rice if you are trying to be a bit healthier.

And now that I mention it, I&rsquom wondering what it would taste like on a piece of Naan? I&rsquom going to have to try that!

What Sauces to Use

I&rsquove always had good luck with the Huy Fong brand for my chili garlic sauce. They also make Sriracha sauce in the squeeze bottle with the green lid that you probably recognize.

I find the Sriracha sauce to be a little less viscous than I&rsquod like. Then I love the garlic flavor in the Huy Fong sauce as well as the amount of spice. It&rsquos just perfect for me (I like spicy but not burn your mouth).

As far as soy sauces, I&rsquove always liked dark soy sauce versus light &ndash and I recently found out that darker soy sauces tend to be thicker and have less saltiness!

That&rsquos probably why I always end up adding extra salt to my dish :0. You won&rsquot need to add any salt to this chilli chicken recipe. It&rsquos just perfect flavored! Try the recipe below.

How to Make Chilli Chicken


  • 2 chicken breasts (about 1lb), cut into pieces
  • 1 tsp garlic, sliced
  • 1 tsp ginger, chopped
  • 2-4 Thai green chili, chopped or slit lengthwise
  • 1 tbsp. soy sauce
  • 1 tbsp. chili garlic sauce (like Huy Fong)
  • 1 tbsp. of ketchup
  • 1/2 cup of chicken broth
  • 1 tbsp. corn starch
  • Salt and freshly cracked black pepper to taste
  • Enough oil for frying the chicken + 1 tbsp. oil
  • 1 tsp ginger paste
  • 2 tsp garlic, grated
  • 3 tbsp. of corn starch
  • 3 tbsp. of flour
  • 2 tbsp. soy sauce
  • Freshly cracked black pepper to taste
  • 1 egg

Vegetables (Optional)

  • 1 large green bell pepper, cut into squares
  • 1 large red onion, cut into squares
  • 1 carrot, sliced
  • 2-3 sprigs of green onion, chopped + some extra for garnish

In a bowl, whisk together all ingredients under &ldquoMarinade.&rdquo Place the chicken pieces in the marinade and place in the fridge for one hour.

Heat enough oil in a wok, then fry the marinated chicken pieces till golden brown (on all sides), about five minutes. Transfer to a paper towel-lined plate.

In another pan, heat 1 tablespoon of oil and fry the chopped ginger, sliced garlic, chopped green onions, and green chilies.

Optional if using vegetables: once fragrant, add in the onions and green bell peppers and fry till the onions turn slightly translucent, about 7 minutes. Add in the carrots and chicken pieces and toss to mix.

In a bowl, mix together soy sauce, chili garlic sauce, ketchup, chicken stock and 1 tablespoon corn starch. Add it to the pan, and cook till the sauce thickens and coats the chicken pieces, about 3 minutes.

Serve with rice or some other carbohydrate.

Chilli Chicken Recipe / How to Make Restaurant Style Chilli Chicken Dry

Even though i cook a lot for my family and for this blog. Someday i want to be lazy and indulge myself from restaurant foods. During those days we would dine outside in some of our favorite restaurants, but most of the time, i love to order some foods, cuddle up in a blanket and watch my favorite shows on TV enjoying those hot foods. These days internet is taking over the world and each day new technologies and sites are emerging out. Some of those are the coupon sites, I came across this site called CupoNation, which offers so much deals and coupons on food, fashion, electronics, travel and lots more, such as Zovi coupons.

Chicken – 3/4 kg boneless
All Purpose Flour / Maida – 1 cup
Cornflour / Cornstarch – 1/2 cup
Salt to taste
Pepper – 1 tsp
Soy Sauce – 2 tsp
Ginger Garlic Paste – 1 tblspn
Water – 1/4 cup
Oil for deep frying

For Sauce:
Butter – 3 tblspn
Ginger – 2 tblspn finely chopped
Garlic – 2 tblspn finely chopped
Onion – 1 large sliced thinly
Green Chilli – 2 slit
Capsicum / Bell Pepper – 1 sliced
Tomato Ketchup – 1/2 cup
Green Chilli Sauce – 3 tblspn
Vinegar – 2 tsp
Soy Sauce – 1 tsp
Red Chilli Powder – 1 tblspn or to taste
Water – 1/2 cup
Black Pepper Powder – 1 tsp
Spring Onion a handful finely chopped
Salt to taste
Sugar – 1 tsp

Start by frying some chicken. Take chicken in a bowl, add in flour, cornflour, salt, pepper, soy sauce, ginger garlic paste and water. mix well. Set aside for 10 mins.

Heat some oil for deep frying, drop the chicken in and fry till golden, drain and set aside.

Now make the sauce, heat some butter in a pan, add in ginger garlic and fry till golden.

Add in onions. green chillies, salt and sugar. Toss well.

Add in capsicum and mix well.

Add in red chilli powder, soy sauce, green chilli sauce, vinegar, ketchup adn mix well.

Chilli Chicken Recipe – Step by Step

Following are the ingredients required for making Chilli Chicken Recipe. Boneless Chicken, All purpose Flour (Cornflour), Maida, Spring Onion White, Spring Onion Greens, Capsicum, Green Chilies, Curry Leaves, Ginger, Garlic, Soy Sauce, Red Chili Sauce.

Slit the Green Chilies. Slice the Capsicum, make some cubes of white spring onion and finely chop the greens of spring onion. Arrange the veggies and keep aside.Break the egg and put it in a bowl along with pieces of boneless chicken. Add 2 tablespoon Cornflour and 5 tablespoon Maida and mix well.Add Salt and Red Chili Powder and mix it thoroughly.Mix all the ingredients properly and keep them aside for 10-15 minutes.Shallow Fry the chicken in non-stick pan. You can also deep fry chicken but deep frying will make chicken more oily. I prefer shallow frying chicken. Allow the chicken pieces to fry for 2-3 minutes on each side on medium heat, keep flipping chicken in between till its gold brown.Cook the chicken pieces on both sides for few minutes.TIR Chef Tip: Cover the pan with lid and cook chicken for 2 more minutes. This will make chicken little crispy and moist from inside.See, how the chicken has turn gold brown. Make sure you don’t over cook chicken, otherwise it will become hard from inside. Take out the chicken and keep it aside for few minutes before making chilli chicken. TIR Chef Tip: You can also cut this chicken in smaller pieces, these pieces can also be used in chicken Hakka noodles, chicken fried rice and of course for making chilli chicken.

Let us now prepare CornStarch. Take a cup and add 100ml water, 1 tablespoon cornflour in it, mix it well till all the cornflour is dissolved in the water. Heat 2 tablespoon oil in pan and add Onion cubes, Slitted Green Chillies, Capsicum, Curry Pata leaves, Ginger and Garlic. Toss all the ingredients on high flame for 2-3 minutes and then add Soy Sauce, Red Chilli Sauce and Cornstarch in it.Add Soy Sauce.

Add Red Chilli Sauce and keep mixing to blend the sauces. Cook all the ingredients for 1-2 minutes, till gravy become thick.Once gravy becomes little thicker, add fried pieces of chicken, 1/4 tablespoon vinegar and one cup finely chopped green spring onions.Cook for 1-2 minutes and now your Chilli Chicken is ready. Tir Chef Tips: If you want to make chilli chicken very dry then you may skip adding cornstarch and add 1 tablespoon tomato ketchup in it. If you want to make chilli chicken in gravy then add 200ml of water while preparing corn starch.
